Today is Monday and the first day of our Allergy Free Diet programme has started!
Breakfast. We woke up at 5.30 a.m. for our morning training. This happens usually once or twice during a week. Sometimes it is a good and awaking warming up! This morning started for us with some rye crisps Wasa Sport (making sure it only consists of allowed ingredients) and lactose free (laktoositon) Flora with a pinch of salt on top of it for a better taste. Of course, coffee was a crutial part of our breakfast at that early hour!
The day was spent at work and then training, so we came home in the evening as usual. The feeling of tiredness was coming from being hungry all day… As well as I didn’t have time to sort out what would be good and easy to prepare for snacks during long days.
Our dinner.I prepared two potatoes in the oven (uuniperuna) which we could eat only a half of the portion. We ate our baked potatoes with Juhla Flora with salt on top. (Next time I bake potatoes, I would use sour cream (for vegans) Oatly crème fraiche with fried onions on top.)
Then I also baked chicken filees and prepared a salad with no dressing: Chinese cabbage, salad leaves and mixed green leaves like rucola and spinach. On the side – sliced cucumber to add some freshness. Our list of allowed products also includes all sort of sprouts so I included them into our meal too. As the meaning of this diet is to eat as little as possible of the processed food, and eat more simple raw ingredients. And we tried to folow it today as best as we could!
Cooking. I just put in the oven chicken filees (marinated in olive oil, salt and pepper) for 30 min where last 10 min I changes for grill to get a little crisp on top and zucchini with a drizzle of olive oil and a pinch of salt and chili flakes. Baked at 200 degrees Celsius. Potatoes were foil wrapped and an hour in oven at same 200 ℃.
